This Southern-style salad delivers 5 layers of flavor with eggs, lettuce, peas, Cheddar cheese, and ranch dressing. It’s a perfect side dish for potlucks.
- 6 large eggs
- 1 head iceberg lettuce
- 1 (16 oz) pkg frozen peas, thawed
- 1 (8 oz) bag shredded cheddar cheese
- 1 ½ cups ranch dressing
- Boil the eggs for 10 min., and rinse under cool running water. Shred lettuce, and place in large bowl. Peel and slice the eggs, and layer on top of lettuce. Top with peas and cheese. Pour ranch dressing over salad. Toss right before serving.
Add hearts of palm, canned corn, or olives for added flavor and texture.
