This simple recipe mixes a low and slow sauce with diced fresh tomatoes for a combination that is summer perfection. Enjoy it with your favorite pasta.
- 2 (28 oz) cans whole peeled tomatoes
- 1 cup diced onion
- 1 tbsp minced garlic
- 3 tbsp olive oil
- 2 fresh tomatoes
- Set all ingredients except for the fresh tomatoes in the bowl of a 6 or 7 quart slow cooker and stir to combine. Set cooker to high and cook, 4 hours. Dice fresh tomatoes and set aside.
- Purée sauce with an immersion blender until smooth and stir in diced tomatoes. Transfer sauce to a pot and reduce slightly over medium high heat, 5 min. Season to taste with salt (in moderation) and pepper before stirring in with your favorite pasta.
