This ceviche features simple and fresh ingredients. Enjoy it on salad, tacos, or with corn chips.
- 2 pints cherry tomatoes
- 1 avocado
- 1 jalapeño
- ½ bunch fresh cilantro
- ½ cup diced red onion
- ½ cup lime juice
- 1 (8 oz) pkg fresh mahi-mahi fillet
- Quarter the tomatoes and dice the avocado. Seed the jalapeño and dice finely. Chop the cilantro. Set all prepped produce in a bowl with the lime juice.
- Cut the mahi-mahi into bite-size cubes and add to the bowl. Season with salt. Gently stir ingredients until fully combined. Set in the refrigerator, covered, for 15 min. before serving.
