These onions caramelize themselves overnight in the slow cooker. Keep leftover onions in the fridge or freeze in smaller portions for instant flavor anytime.
Ingredients
- 3 lbs yellow onions
- 3 tbsp olive oil
- ½ tsp salt
- 1 (10 oz) pkg Nature's Promise Organic Green Beans
Steps
- Halve each onion and thinly slice. In a 6-quart slow cooker, combine the oil, onions, and salt. Cover and cook on low 12 hours, until onions are deep golden brown and soft. Use a slotted spoon to transfer onions to a storage container, discarding excess liquid. Refrigerate until needed.
- To blanch the green beans, heat a large pot of salted water to boiling on high. Add the green beans and cook 4 min., until tender. Drain and rinse with very cold water until cool. Drain beans again and blot with paper towels, then transfer to a serving platter. Microwave 1 cup caramelized onions 2 min., until hot. Spoon onions over green beans.
