Using medium-ground polenta or cornmeal requires a longer cooking time for the dish but is well worth the results.
- 1 ½ cups medium-ground polenta/cornmeal
- In a heavy-duty medium pot, heat 7 cups salted water to a boil on high.
- Once boiling, stir in polenta. Reduce heat to low and simmer 25–35 min., until polenta is thick, stirring frequently.
- Season with salt and pepper and serve.
