Eaten on its own or used to bulk up soups or stews, barley is a high-fiber, often-overlooked grain.
- 2 cups pearl barley
- In a large pot, heat 6 cups salted water to a boil on high.
- Add barley to pot. Reduce heat, cover, and simmer 50–60 min., until barley is tender. Check water level after 25 min., adding more water, if needed.
- Let barley stand, covered, 10 min. Drain, if needed.
