Using pre-cut packaged butternut squash is an efficient time-saver. Toss these roasted pieces into a salad or mash with a touch of milk and butter.
- 2 (20 oz) pkgs Nature's Promise Organic butternut squash
- 2 tbsp olive oil
- Preheat oven to 425℉. Cut butternut squash into ½-inch chunks and add to a bowl, along with oil, salt, and pepper. Toss until well coated.
- Arrange butternut squash in single layer on a large parchment-lined baking sheet. Bake 18–20 min., until squash is tender, tossing halfway through.
