Let your guests cool down with this boozy fruit that is both a snack and cocktail in one.
- ⅓ cup light brown sugar
- ½ tsp apple pie spice
- 1 ½ cups Bourbon
- 2 tbsp lemon juice
- 4 cups pineapple chunks
- In a small saucepan, combine the sugar, spice, and ⅓ cup water. Heat on medium 2 min., until sugar dissolves, stirring occasionally. Remove from heat and stir in the bourbon and lemon juice. Pour mixture into medium bowl.
- Stir the pineapple into bourbon mixture and cover with plastic. Freeze until very cold, about 2 hours, stirring every 30 min. for the first hour. Serve with toothpicks.
Use this same method with other combos of fruit, flavorings, and spirits, like:
Watermelon chunks + gin + 2 tbsp lime juice and zest
Fresh peach wedges + vodka + 2 tsp grated fresh ginger + ¼ tsp cinnamon
Drain bourbon mixture before serving and save for use in cocktails.
