The mint and ginger flavor infusion in these refreshing ice pops is subtle enough for kids yet sophisticated enough for adults.
Ingredients
- 2 cups fresh pineapple chunks
- 1 lime
- 1 (2-inch) piece fresh ginger, scrubbed and thinly sliced
- ½ cup loosely packed fresh mint leaves
- ⅓ cup sugar
Steps
- Freeze the pineapple in a single layer 1 hour, until just solid.
- Meanwhile, with a vegetable peeler, remove all zest from the lime in strips and place in a saucepan along with the ginger, mint, sugar, and ¾ cup water. Heat on medium, until sugar dissolves, stirring occasionally. Remove from heat and cool completely. Remove and discard zest, mint, and ginger.
- To a blender, add the ginger syrup and half of pineapple. Squeeze in 1 tbsp juice from lime. Pulse to finely chop pineapple. Add remaining pineapple and pulse until well combined with little bits of pineapple throughout. Stir mixture. Divide among 6 ice pop molds and insert sticks. Freeze until solid.
