Try these turkey taco bowls for a quick lunch or dinner. An avocado-lime sauce makes this veggie-packed recipe extra delicious.
Ingredients
- 1 tbsp olive oil
- 1 lb lean ground turkey
- 2 tsp sodium-free chili powder
- ¼ tsp ground cumin
- 1 ripe avocado, peeled and pitted
- ½ cup chopped cilantro
- 1 lime
- ½ cup nonfat Greek yogurt
- 1 (15.9 oz) pkg precooked Nature's Promise® Brown Rice
- 2 cups frozen corn, thawed
- 1 (15 oz) can low-sodium black beans, drained and rinsed
- ¼ cup chopped red onion
- 1 cup chopped tomatoes
Steps
- In a 12-inch skillet, heat the oil on medium-low. Add the turkey, chili powder, and cumin and cook 8–10 min., until browned, breaking up with a wooden spoon. Season with salt and pepper.
- Meanwhile, cut the avocado into chunks. In a blender or food processor, combine the avocado, cilantro, juice of the lime, and Greek yogurt. Season with salt and pepper. Blend 1–2 min., until smooth.
- Microwave the rice according to package directions. If desired, microwave the corn according to package directions. Divide rice equally among 4 bowls. Top bowls with cooked turkey, beans, corn, onion, and tomatoes. Dollop avocado-lime sauce on each bowl.
