Ingredients
- 2 ripe bananas
- 1 ½ cup quick-cooking oats
- ½ cup puffed rice cereal
- ¼ cup natural peanut butter
- ½ cup roughly chopped Medjool dates
- ¼ cup sunflower seeds or pepitas
- 2 tbsp dried cranberries
- 1 tsp vanilla extract
- ¼ cup chopped pistachios (optional)
Steps
- Preheat oven to 350°F. Line a baking sheet with parchment. In a large bowl, mash the bananas with a fork. Add the oats, puffed rice, peanut butter, dates, sunflower seeds, dried cranberries, vanilla, and pistachios, if using. Stir until thoroughly incorporated.
- Drop rounded tablespoons of dough onto prepared baking sheet and flatten slightly. Bake 25 min., until just set. Allow to cool completely on baking sheet.
