Ingredients
- 1 ripe avocado
- ¼ small red onion
- 1 red apple
- 1 (5 oz) pkg Nature's Promise® Baby Arugula
- ¾ cup refrigerated sauerkraut
- 2 tbsp olive oil
Steps
- Peel, pit, and thinly slice the avocado. Thinly slice the onion. Core and thinly slice the apple.
- To a large bowl, add the arugula, onion, apple, sauerkraut, and oil. Season with salt and pepper to taste. Toss until combined. Top with avocado and serve immediately.
