This easy salad is inspired by the classic Italian sandwich invented in New Orleans. Try serving it in one large dish or several individual bowls.
Ingredients
- 4 cups spring lettuce mix
- 2 oz salami, diced
- 4 oz sharp provolone cheese, diced
- 3 stalks celery, chopped
- 1 red bell pepper, seeded and chopped
- ¼ cup sliced pepperoncini
- 1 (6.5 oz) can sliced olives
- ¼ cup grated Parmesan cheese
- ¼ cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried parsley
- 1 cup whole-wheat croutons
Steps
- In a large bowl or trifle dish, layer the lettuce, salami, provolone, celery, bell pepper, pepperoncini, olives, and Parmesan cheese.
- When ready to serve, whisk together the oil, vinegar, and parsley in a small bowl. Season with salt and pepper. Drizzle dressing over salad. Sprinkle with the croutons.
