Flaky, buttery jam bars are a sweet addition to any holiday spread.
Ingredients
- 1 ¾ sticks unsalted butter, cold, cut into small cubes
- 2 cups flour
- 1 cup sugar
- ⅓ cup raspberry jam
Steps
- Preheat the oven to 400°F. Combine the butter, flour, and sugar in a bowl and knead with your fingertips until it forms a crumbly dough. Grease a 9x9-inch baking dish and spread half the dough over it. Press dough down firmly with hands.
- Gently spread the jam over the dough. Sprinkle the remaining crumb mixture evenly over the top and press down gently, using a rubber spatula. Bake in the oven for about 20 min., or until golden brown. Remove from oven and let cool.
- Using a knife, separate the pastry from the sides of the pan. Slice into 25 square bars.
Tips
Feel free to use any other type of jam, like strawberry, blackberry, or apricot.
